Veggie Pinwheels

Ingredients:
  • 4 cups swiss chard or kale, stems removed and sliced thin (It seems a lot but reduces dramatically when you steam the leaves.)
  • several leaves of romaine lettuce, sliced thin
  • 3–4 pieces artichoke hearts, sliced thin as possible
  • several whole wheat burrito size tortillas
  • 2–3 TBS Dijon mustard
  • 2 TBS fresh lemon juice
  • Instructions:
    1. Steam the swiss chard or kale, then squeeze out excess liquid. Warm tortillas until soft and pliable.
    2. Spread a bit of Dijon mustard on the tortilla.
    3. Spread a layer of steamed chard or kale, add a layer of romaine lettuce, add a few thin slices of artichoke hearts.
    4. Squeeze a bit of lemon juice over the greens.
    5. Roll up the tortilla and greens tightly, then cut into 1 inch pieces.

    This is super healthy and very nutritious. Enjoy!
