Original recipe from Elaine French. I adapted it.
Ingredients: 4 cups swiss chard or kale, stems removed and sliced thin (It seems a lot but reduces dramatically when you steam the leaves.) several leaves of romaine lettuce, sliced thin 3–4 pieces artichoke hearts, sliced thin as possible several whole wheat burrito size tortillas 2–3 TBS Dijon mustard 2 TBS fresh lemon juice Instructions: - Steam the swiss chard or kale, then squeeze out excess liquid. Warm tortillas until soft and pliable.
- Spread a bit of Dijon mustard on the tortilla.
- Spread a layer of steamed chard or kale, add a layer of romaine lettuce, add a few thin slices of artichoke hearts.
- Squeeze a bit of lemon juice over the greens.
- Roll up the tortilla and greens tightly, then cut into 1 inch pieces.
This is super healthy and very nutritious. Enjoy!
