Quinoa & Mushroom Skillet

This is an "under 30 minute meal." Get quinoa in the bulk food section of health food stores. This dish has a rich nutty flavor.

Ingredients:
  • 2 TBS olive oil
  • 1 medium red onion, quartered and thinly sliced
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 10 ounces crimini mushrooms, sliced
  • Instructions:
    1. Heat oil in a large skillet over medium high heat. Add onion and cook, stirring, until golden brown, about 5 minutes.
    2. Stir in quinoa and cook, stirring until lightly toasted, about 2 minutes.
    3. Pour in broth. Add mushrooms. Cover and cook about 15 minutes until liquid is absorbed.
    4. Season with salt and pepper. Enjoy
