Quinoa & Mushroom Skillet

This is an "under 30 minute meal." Get quinoa in the bulk food section of health food stores. This dish has a rich nutty flavor.
Ingredients: 2 TBS olive oil 1 medium red onion, quartered and thinly sliced 1 cup quinoa 2 cups vegetable broth 10 ounces crimini mushrooms, sliced Instructions:

- Heat oil in a large skillet over medium high heat. Add onion and cook, stirring, until golden brown, about 5 minutes.
- Stir in quinoa and cook, stirring until lightly toasted, about 2 minutes.
- Pour in broth. Add mushrooms. Cover and cook about 15 minutes until liquid is absorbed.
- Season with salt and pepper. Enjoy
