Crunchy Quinoa Salad

Dressing Ingredients:
  • 6 tablespoons corn or sunflower oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 TBS tamari
  • 1 1/2 teaspoon black pepper
  • 3 cloves garlic, minced
  • Salad Ingredients:
  • 1 cup quinoa, rinsed WELL
  • 1 3/4 cups cool water (to cook quinoa)
  • 1/4 lb. carrots, shredded/grated
  • 1/4 cup sesame seeds
  • 1/4 cup sunflower seeds
  • 3 stalks green onion
  • 1/2 cup cilantro
  • Directions:
    1. Cook quinoa till water is absorbed. Cooking time can vary from 25-45 minutes; just keep an eye on it, and stir several times during cooking process.
    2. While quinoa is cooking, make dressing by mixing together all dressing ingredients, EXCEPT 2 TBS OF OIL AND GARLIC. Take out the two tablespoons of oil and heat it over medium-high heat and sauté the garlic until golden. Then combine everything and whisk or blend until emulsified.
    3. After quinoa is cooked, mix it with all other salad ingredients.
    4. Coat with dressing. Mix thoroughly. Salt to taste. This WILL NEED SOME SALT.
