Dressing Ingredients: 6 tablespoons corn or sunflower oil 2 tablespoons apple cider vinegar 1 tablespoon lemon juice 1 TBS tamari 1 1/2 teaspoon black pepper 3 cloves garlic, mincedSalad Ingredients: 1 cup quinoa, rinsed WELL 1 3/4 cups cool water (to cook quinoa) 1/4 lb. carrots, shredded/grated 1/4 cup sesame seeds 1/4 cup sunflower seeds 3 stalks green onion 1/2 cup cilantroDirections: - Cook quinoa till water is absorbed. Cooking time can vary from 25-45 minutes; just keep an eye on it, and stir several times during cooking process.
- While quinoa is cooking, make dressing by mixing together all dressing ingredients, EXCEPT 2 TBS OF OIL AND GARLIC. Take out the two tablespoons of oil and heat it over medium-high heat and sauté the garlic until golden. Then combine everything and whisk or blend until emulsified.
- After quinoa is cooked, mix it with all other salad ingredients.
- Coat with dressing. Mix thoroughly. Salt to taste. This WILL NEED SOME SALT.
