Polenta With Tomato Sauce, Veggie Links & Beans For Breakfast

This is a hearty breakfast that will fill you up, and it's easy to make.

PolentaIngredients:
  • Cooking spray
  • Pre-cooked Polenta, cut into 1/2 inch rounds
  • Veggie Breakfast Links
  • 1/2 cup canned Pinto Beans, rinsed and drained
  • 1/2 cup of your favorite spaghetti sauce
  • Whole grain bread
  • Fruit preserves
  • Instructions:
    1. The polenta comes from Down To Earth in a plastic wrapped roll. You just cut it into half inch rounds.
    2. Spray vegetable oil cooking spray on a non-stick pan, heat over medium high. Fry the polenta along with veggie breakfast links, until the polenta begins to brown slightly. You can also heat the beans in the same pan.
    3. When the polenta has cooked for about 3-5 minutes, top with spaghetti sauce.
    4. Toast the bread and add the jam. Enjoy!
