Dick's Double Mushroom Pizza

I demonstrated this homemade pizza crust from scratch -by hand- instead of a bread machine. It really is pretty easy to do.

Double Mushroom PizzaCrust:
  • 1 1/2 cups all purpose flour
  • 1/2 tsp yeast
  • 2 tsp olive oil
  • 1 tsp salt
  • 1/2 cup water
  • Directions:
    1. Combine all ingredients and form into dough. Knead on a flat surface for 5 minutes, using your palms to stretch and fold the dough.
    2. Place in a large bowl, covered, in a warm place for 20-30 minutes.
    3. Form into ball, then press down with fingers to make a rounded flat shape.
    4. Roll with rolling pin to desired thickness and size. (This should be enough dough for 1 medium size pizza. Double the recipe if you want to make 2 or one very large.)

    Topping:
  • 1/2 to 3/4 cup store bought jar of spaghetti sauce
  • 2 TBS olive oil
  • 1/2 yellow onion, cut into thin rounds
  • 2 cups white mushrooms, sliced
  • 1 portabella mushroom, cubed
  • artichoke hearts, cut into quarters
  • Kalamata olives
  • Grated soy cheese
  • Directions:
    1. Saute onion and garlic in olive oil. Add mushrooms and saute until they get soft and begin to release liquid.
    2. Place the dough on a pizza pan, sprayed with cooking spray.
    3. Spoon the spaghetti sauce on to the dough to form a thin layer.
    4. Add the cooked mushrooms and onions. Top with artichoke hearts and olives, then grated cheese.
    5. Cook in 500 degree oven for about 12 minutes until crust is browned and crisp on the edges.
