Orzo is a pasta made to look like a grain. It takes about 12- 14 minutes to cook.
Ingredients: 1 cup orzo 2 TBS olive oil 2 cloves garlic, minced 1/2 red onion, diced 1 portabella mushroom, chopped (or use any mushrooms, 6-8 sliced) 1/2 cup diced zucchini 1/2 cup diced carrot 8-10 Kalamata olives, chopped 1/3 cup pine nuts 1 small or 1/2 large tomato, dicedInstructions: - Cook the orzo in boiling water for 12-14 minutes, until tender. Drain and set aside.
- Saute onion and garlic in oil then add mushrooms. Add remaining vegetables and pine nuts and sauté until crispy tender, about 3-4 minutes. Salt and pepper to taste.
- Add cooked orzo and mix well. Adjust seasonings to taste.
