Orzo With Vegetables

Orzo is a pasta made to look like a grain. It takes about 12- 14 minutes to cook.

Ingredients:
  • 1 cup orzo
  • 2 TBS olive oil
  • 2 cloves garlic, minced
  • 1/2 red onion, diced
  • 1 portabella mushroom, chopped (or use any mushrooms, 6-8 sliced)
  • 1/2 cup diced zucchini
  • 1/2 cup diced carrot
  • 8-10 Kalamata olives, chopped
  • 1/3 cup pine nuts
  • 1 small or 1/2 large tomato, diced
  • Instructions:
    1. Cook the orzo in boiling water for 12-14 minutes, until tender. Drain and set aside.
    2. Saute onion and garlic in oil then add mushrooms. Add remaining vegetables and pine nuts and sauté until crispy tender, about 3-4 minutes. Salt and pepper to taste.
    3. Add cooked orzo and mix well. Adjust seasonings to taste.
