Cuban Black Beans With Mango Salsa

Looks like a good mango season. You can get the veggie Canadian bacon at Down To Earth freezer section.Mango Relish 2 mangos, peeled and diced 1/2 cup chopped red bell pepper 3 green onions, sliced 2 TBS cilantro juice of 1 lime 1 tsp sugar Combine relish ingredients and mix well. Set aside in the refrigerator until ready for use.Cuban Black Beans 2 tsp olive oil 2 cloves minced garlic 1/2 cup chopped onion 6 ounces Yves veggie Canadian Bacon, diced 2 15-ounce cans black beans, drained 1 TBS red wine vinegar 1/3 cup chopped cilantro 1 tsp cumin dash of pepper chili paste to taste Instructions:
- Heat oil in a sauce pan over medium heat. Add garlic, onion, and veggie bacon. Sauce for 5 minutes, stirring frequently.
- Add beans, vinegar, cilantro, cumin, and pepper. Stir in chili paste to taste. Reduce heat to low and cook for 10 minutes. Serve with salsa.
