Cuban Black Beans With Mango Salsa

Looks like a good mango season. You can get the veggie Canadian bacon at Down To Earth freezer section.

Mango Relish
  • 2 mangos, peeled and diced
  • 1/2 cup chopped red bell pepper
  • 3 green onions, sliced
  • 2 TBS cilantro
  • juice of 1 lime
  • 1 tsp sugar
  • Combine relish ingredients and mix well. Set aside in the refrigerator until ready for use.

    Cuban Black Beans
  • 2 tsp olive oil
  • 2 cloves minced garlic
  • 1/2 cup chopped onion
  • 6 ounces Yves veggie Canadian Bacon, diced
  • 2 15-ounce cans black beans, drained
  • 1 TBS red wine vinegar
  • 1/3 cup chopped cilantro
  • 1 tsp cumin
  • dash of pepper
  • chili paste to taste
  • Instructions:
    1. Heat oil in a sauce pan over medium heat. Add garlic, onion, and veggie bacon. Sauce for 5 minutes, stirring frequently.
    2. Add beans, vinegar, cilantro, cumin, and pepper. Stir in chili paste to taste. Reduce heat to low and cook for 10 minutes. Serve with salsa.
