This is a great substitute for cream cheese to top bagels
Ingredients:
10 ounces silken tofu
1/4 cup Veganaise (or non fat mayo)
2 tsp Dijon mustard
1/2 tsp garlic powder
3/4 cup diced celery
3/4 cup diced green bell pepper
1 small Maui onion, diced
1 TBS balsamic vinegar
2 bagels, cut in half (and you can toast them)
2 vine ripened tomatoes, sliced for garnishDirections:
Drain and mash tofu. Mix with mayonnaise, mustard, garlic powder, celery, green pepper, onion, and vinegar. Spoon mixture onto bagel, top with tomato and enjoy.
