This features my favorite "always have it on hand" spread, called Gee Whiz.
Ingredients: Gee Whiz
1 can Navy Beans (or other white beans) rinsed and drained
3 TBS tahini (sesame paste found at Down To Earth)
6 TBS nutritional yeast (This is found in bulk food bins at Down To Earth)
1/2 cup roasted red bell pepper (or pimentos)
1 tsp onion powder
1 tsp salt
3 TBS lemon juice
1 tsp yellow mustardDirections:
Blend in food processor until smooth. Store in Tupperware container in the fridge. It lasts up to 10 days.To make the pasta and and sauce:
Cook bow tie pasta per package directions. I usually 1/2 package- about 6 - 8 ounces.While pasta is cooking saute 10 - 12 sliced mushrooms in a bit of oil, until mushrooms start to give up liquid. Add the cooked pasta. Add about 1 cup (or more to taste) Gee Whiz sauce, add 3/4 cup (more or less to desired consistency) rice milk to make it creamier. Garnish with fresh parsley.
