For those of you with a sweet tooth, these are easy to make and made with natural whole foods. This recipe is a good one to maybe make your first venture to a health food store like Down To Earth. You can find things like the shredded coconut and the rolled oats in the bulk food bins. Likewise the dates will be in the bins. Then you can go over to the bulk bins of nuts and grind your own fresh almond butter. The sesame seeds are also in bulk bins. Learn about some new foods- have an adventure!
If you have trouble finding any of the ingredients ask someone at the store and they will guide you to what you need.
Ingredients:
1/2 cup shredded coconut
1 cup rolled oats
1 cup date pieces
3/4 cup almond butter
1/4 cup raw sesame seeds
2 tsp grated orange peel
1/3 cup fresh orange juiceDirections:
- Place half the coconut on a plate and set aside. Put the rolled oats in a heavy skillet and toast for a few minutes, stirring constantly. When they begin to darken and you can smell a toasted aroma, put the oats in a food processor. Process on high to a fine consistency.
- Add the remaining coconut and dates and process to chop fine. Add almond butter, sesame seeds and orange peel. Add orange juice then process until it forms a "homogeneous mass." Add a bit more juice if necessary to get a thick well blended consistency. This mixture should be fairly dry, not moist and mushy.
- Use your hands to form mixture into balls about 1 1/2 inches in diameter. Roll the balls in the remaining shredded coconut. Put them on a plate and chill for an hour or so before serving.
