Meatloaf

Sorry mom, I never liked regular meatloaf. This is a great veggie version.

Ingredients:
  • 2 cups veggie burger crumbled. (You can get canned veggie ground round at Down To Earth, Gimme Lean hamburger substitute, or Yves ground round in the freezer section or Gardenburgers or Boca Burgers. Your choice.)
  • 1 cup dry breadcrumbs
  • 1 cup quick oats (Quick oats are available at bulk bins at health food stores.)
  • 1/3 cup ketchup
  • 1 TBS onion powder
  • 1 tsp garlic powder
  • 1 TBS Ener-G Egg Replacer (dry)
  • 1 cup hot water
  • Pan Spray
  • Tomato Sauce: 1/2 cup ketchup and 1/2 cup vegan Worcestershire sauce
  • Directions:
    1. In a large bowl, combine burger, crumbs, and oats. Add ketchup, onion, garlic, and Ener-G. Pour on hot water and mix well.
    2. Form into a loaf, and mold into a sprayed baking pan. Pour tomato sauce over loaf.
    3. Bake at 325 F for 40-45 minutes, basting with more tomato sauce (or mixture) once or twice. Serve topped with additional sauce.
