Sweet And Sour Veggie Pork

This is one of the best recipes we've done. Ruby loved it!
Ingredients: Sweet and Sour Sauce:
1/4 cup rice vinegar
1 TBS soy sauce
2 TBS white wine
1 cup pineapple juice
1/4 cup sugar
1/2 tsp chili flakes (optional)
1 TBS cornstarch mixed in 1 or 2 TBS water Directions:
Combine all ingredients except cornstarch in water in a medium saucepan. Bring to a boil, add cornstarch mixture to thicken. Remove from heat and set aside. Ingredients:
1 TBS oil
1/2 onion chopped
1/2 large green bell pepper chopped
1/2 large red bell pepper chopped
1 medium carrot, sliced
1/2 to 3/4 cups pineapple chunks
1 package Citrus Ribs from C&C Vegetarian Foods in Kaimuki (or substitute White Wave "beef" stir fry strips from Down To Earth) Directions:
Ingredients: Sweet and Sour Sauce:
- In a wok or non stick, pan heat oil over medium high heat. Add onion and sauté briefly. Add bell peppers and carrot and continue to cook until crispy tender.
- Add Citrus Ribs or stir fry strips. Cook until heated.
- Add pineapple, continue to cook briefly
- Add sweet and sour sauce and mix well to combine.
- Serve over brown rice.
