Sweet And Sour Veggie Pork

This is one of the best recipes we've done. Ruby loved it!

Sweet Sour Ingredients: Sweet and Sour Sauce:
  • 1/4 cup rice vinegar
  • 1 TBS soy sauce
  • 2 TBS white wine
  • 1 cup pineapple juice
  • 1/4 cup sugar
  • 1/2 tsp chili flakes (optional)
  • 1 TBS cornstarch mixed in 1 or 2 TBS water
  • Directions:
  • Combine all ingredients except cornstarch in water in a medium saucepan. Bring to a boil, add cornstarch mixture to thicken. Remove from heat and set aside.
  • Ingredients:
  • 1 TBS oil
  • 1/2 onion chopped
  • 1/2 large green bell pepper chopped
  • 1/2 large red bell pepper chopped
  • 1 medium carrot, sliced
  • 1/2 to 3/4 cups pineapple chunks
  • 1 package Citrus Ribs from C&C Vegetarian Foods in Kaimuki (or substitute White Wave "beef" stir fry strips from Down To Earth)
  • Directions:
    1. In a wok or non stick, pan heat oil over medium high heat. Add onion and sauté briefly. Add bell peppers and carrot and continue to cook until crispy tender.
    2. Add Citrus Ribs or stir fry strips. Cook until heated.
    3. Add pineapple, continue to cook briefly
    4. Add sweet and sour sauce and mix well to combine.
    5. Serve over brown rice.
