Dick's Fabulous Five-A-Day Pasta

A good way to get your recommended servings of vegetables.

Ingredients:
  • 1/2 cup veggie broth or water
  • 1/2 package Rotelli pasta, cooked per directions (or use your favorite pasta)
  • 1 jar Fruitti di bosco PUTTANESCA SAUCE (available at Down To Earth or any low fat spaghetti sauce)
  • 1 small carrot, sliced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1/2 red onion, sliced
  • 1 clove garlic, minced
  • 1 cup mushrooms, sliced
  • 3 - 4 TBS hummus (fresh hummus in the fridge case at Down To Earth)
  • optional: red pepper flakes
  • Directions:
    1. Stir fry/steam the vegetables in the veggie broth in a medium saucepan over medium high heat, about 5 minutes until they are crispy tender.
    2. Add spaghetti sauce, bring to a bubbling boil, turn down heat and simmer.
    3. Add 3-4 TBS of hummus. Simmer several more minutes.
    4. Serve over pasta.
