Dick's Fabulous Five-A-Day Pasta

A good way to get your recommended servings of vegetables.Ingredients:
1/2 cup veggie broth or water
1/2 package Rotelli pasta, cooked per directions (or use your favorite pasta)
1 jar Fruitti di bosco PUTTANESCA SAUCE (available at Down To Earth or any low fat spaghetti sauce)
1 small carrot, sliced
1 cup broccoli florets
1 cup cauliflower florets
1/2 red onion, sliced
1 clove garlic, minced
1 cup mushrooms, sliced
3 - 4 TBS hummus (fresh hummus in the fridge case at Down To Earth)
optional: red pepper flakes Directions:
- Stir fry/steam the vegetables in the veggie broth in a medium saucepan over medium high heat, about 5 minutes until they are crispy tender.
- Add spaghetti sauce, bring to a bubbling boil, turn down heat and simmer.
- Add 3-4 TBS of hummus. Simmer several more minutes.
- Serve over pasta.
