Shrimp Fried Rice

Featuring veggie shrimp from C & C Vegetarian Foods in Kaimuki. The phone number is 735-9919.

C & C HEALTH FOODS is located in Kaimuki at the very top of Kapahulu Avenue. Right after you go under the freeway, it is tucked back away in a driveway on the right. The phone number is 735-9919.

Ingredients:
  • 1 cup jasmine rice cooked to make 3 cups cooked
  • 1 TBS vegetable oil
  • 2 cloves garlic minced
  • 1/2 yellow onion, sliced
  • 1 cup cauliflower florets
  • 1/2 carrot, sliced
  • 1 stalk celery, sliced
  • 1/2 cup frozen peas
  • 10-12 frozen veggie shrimp
  • 3 -4 TBS Lee Kum Kee Vegetarian stir fry sauce
  • sliced tomato, lime for garnish
  • Instructions:
    1. Cook the rice and cool. Heat vegetable oil in a wok, add garlic, onion, cauliflower, celery and carrot.
    2. Stir fry several minutes until veggies are crispy tender. Add veggie shrimp and continue to stir fry. Add the peas.
    3. Add stir fry sauce. (*I also add a few teaspoons of hot chili paste- but not with Ruby.)
    4. Add cooked rice and heat through and mix well.
    5. Serve with tomato and lime for garnish.
