Breakfast Burritos

Ruby really loved these! You can get the vegetarian bacon bits at Down To Earth. These are also great on salads.

Ingredients:
  • 1 package water packed tofu
  • 1 TBS toasted sesame oil
  • 1 clove garlic, chopped fine
  • 1 tsp turmeric
  • 1/2 tsp curry (or to taste)
  • 2 tsp soy sauce
  • 1/2 cup grated zucchini
  • 1/2 grated carrot
  • 1/4 cup vegetarian bacon bits
  • flour tortillas
  • salsa
  • sliced green onion for garnish
  • Instructions:
    1. Drain and press the tofu.
    2. Heat the sesame oil over medium heat, then saute the garlic until soft.
    3. Crumble the pressed tofu into the pan using your hands. Fry the tofu until it begins to brown and the water is cooked out. Then add the soy sauce and mix.
    4. Sprinkle in the turmeric and curry and mix again until the color is an even yellow. Add the grated carrot and zucchini. Add the bacon bits. Stir the scramble until everything is evenly mixed. Garnish with chopped green onions.
    5. Place a portion of the scrambled tofu on a warm tortilla, top with salsa. Roll up and enjoy.
