For fresh pasta I used a pasta maker with 2 cups semolina flour, about 3 / 4 cup of water, 2 TBS EnerG Egg replacer. Mix dough, process thru machine and cook in boiling pot of water for two minutes. You can substitute Linguini or Fettuccini store bought noodles.
Ingredients: the sauce
3 TBS Down To Earth Vegan Pesto. This is ready made pesto in their cold case next to the sandwiches.
4 - 6 cloves garlic, sliced
1/2 of a 6 ounce package Smart Menu Chick'n Strips
1 large tomato, chopped
8 - 10 Kalamata olives, pitted
6 oz jar artichoke salad (or artichoke hearts)
Vegan Parmesan Alternative for garnishInstructions:
Stir fry the garlic and chick'n strips in a non stick pan in a bit of oil until they begin to brown. Add the tomatoes, continue cooking several minutes. Add olives, add artichoke hearts.When the pasta is cooked, drain and toss with 3 TBS of pesto sauce. Then top with the Chick'n and artichoke heart stir fry. Garnish with Parmesan alternative.
