Simple Hummus

Dr. Shintani's HummusIngredients:
  • 1 cup garbanzo beans (chickpeas), cooked
  • 2 to 3 tablespoons lemon juice
  • 1 tablespoon onion, minced
  • 1 clove garlic, crushed
  • 1 teaspoon cumin
  • Low-sodium soy sauce or salt, to taste
  • Pepper to taste
  • Water
  • Instructions:
    1. Cook the dry garbanzo beans per package directions. (Also, see bean cooking chart in Chapter 11 on page 35.) You may use precooked canned beans instead, if you wish.
    2. Mash beans and mix ingredients together with enough water to keep a thick moist dip consistency. Makes 8 (2 tablespoon) servings. (1 serving = 94 calories, 1.3 grams fat: 22% protein, 67% carbohydrates, 12% fat)
