Strawberry-Banana Pudding

This was good enough that Ruby said she was going to make it for her husband. From Dr. Terry Shintani's "Hawaii Diet."

Ingredients:
  • 12 ounces extra firm silken tofu
  • 1 1/2 cups fresh strawberries
  • 1 banana
  • 1 tsp vanilla extract
  • 1 TBS fresh lemon juice
  • 1/4 tsp salt
  • 3 TBS honey
  • Instructions:
  • In a food processor or blender, combine all ingredients and blend until smooth and creamy. Pour into individual serving dishes and chill overnight.
  • Per serving: 109 Calories: 1. 2 grams (15%) fat; 23% protein; 62% carbohydrates.
