This is a really good fresh homemade pasta sauce. It is easier than you would think.
Ingredients:
2 lb fresh vine ripened tomatoes
1 TBS olive oil
1/4 tsp crushed red pepper
3 cloves garlic, minced
1 medium red onion, chopped
1 cup sliced baby carrots, cut into 1/4 inch thick pieces
1 medium zucchini, quartered lengthwise and cut into 1/4 inch long pieces
1 6 oz. can tomato paste
3/4 cup red wine
2 TBS balsamic vinegar
1/3 cup fresh basil chopped
1/4 fresh chopped Italian parsley
1 tsp dry thyme
1 lb penne pasta, cooked per package directionsInstructions:
- Chop tomatoes and then pulse briefly in a food processor or blender. Set aside.
- In a pot or large saucepan heat oil and crushed red pepper. Cook for 1 minute. Add garlic and onion, saute 3 minutes. Add carrots and zucchini, cook 5 minutes until vegetables are soft. Add tomatoes and spoon in tomato paste, add red wine and balsamic vinegar.
- Reduce heat to medium low and simmer 5 minutes. Add basil, parsley, thyme, salt to taste and cook 10 minutes longer. Serve with penne pasta.
