Garden Penne Pasta

This is a really good fresh homemade pasta sauce. It is easier than you would think.

Garden Penne PastaIngredients:
  • 2 lb fresh vine ripened tomatoes
  • 1 TBS olive oil
  • 1/4 tsp crushed red pepper
  • 3 cloves garlic, minced
  • 1 medium red onion, chopped
  • 1 cup sliced baby carrots, cut into 1/4 inch thick pieces
  • 1 medium zucchini, quartered lengthwise and cut into 1/4 inch long pieces
  • 1 6 oz. can tomato paste
  • 3/4 cup red wine
  • 2 TBS balsamic vinegar
  • 1/3 cup fresh basil chopped
  • 1/4 fresh chopped Italian parsley
  • 1 tsp dry thyme
  • 1 lb penne pasta, cooked per package directions
  • Instructions:
    1. Chop tomatoes and then pulse briefly in a food processor or blender. Set aside.
    2. In a pot or large saucepan heat oil and crushed red pepper. Cook for 1 minute. Add garlic and onion, saute 3 minutes. Add carrots and zucchini, cook 5 minutes until vegetables are soft. Add tomatoes and spoon in tomato paste, add red wine and balsamic vinegar.
    3. Reduce heat to medium low and simmer 5 minutes. Add basil, parsley, thyme, salt to taste and cook 10 minutes longer. Serve with penne pasta.
