Chocolate Mousse

We made this and the agar agar did not fully dissolve. You need to make sure it dissolves fully in a little warm water.

Chocolate Tofu MousseIngredients:
  • 12 ozs non dairy unsweetened chocolate chips
  • 1 TBS agar agar flakes (gelatin like stuff made from seaweed)
  • 2 12-oz packages silken tofu
  • 2/3 cup raw sugar
  • 1 TBS cornstarch
  • 1/2 cup soy milk
  • 2 TBS Energ-Egg Replacer
  • Instructions:
    1. Melt chocolate chips and blend with silken tofu, agar agar, and sugar in a blender. Mix cornstarch with 1/4 cup soy milk and set aside.
    2. Pour blended contents into sauce pan and add cornstarch-soy milk mixture. Stir blend while heating slowly until mixture is hot enough to start to thicken. Meanwhile use an electric mixer to whip the egg substitute with 1 / 4 cup soy milk, into stiff peaks.
    3. Transfer pudding into a mixing bowl and fold the whipped egg substitute into the hot pudding. Pour into parfait glasses or bowls and chill. Serve cold.
