Won Ton Sandwiches

An exotic little finger food, great for a party.

Ingredients:
  • Vegetable oil for frying, about a cup
  • 6 won ton skins, the kind about 3 inches across
  • 4 oz oriental flavor baked tofu, diced
  • 5 oz (1/3 cup) precooked soybeans (edamame)
  • 1/4 cup cilantro leaves
  • 3 TBS dry roasted peanuts
  • 3 TBS Thai peanut sauce
  • Instructions:
    1. Heat oil in large skillet over medium heat. When hot, fry won ton skins until golden. Using tongs, turn skins over and fry several seconds on the other side. Remove from heat, place on paper towels to blot extra oil. Set aside
    2. Combine tofu, edamame, cilantro leaves, peanuts, and peanut sauce in a bowl, stirring well to combine. Divide evenly, mound mixture on skins, and serve.
