I made this for some of the folks in the newsroom, and they loved it.
Ingredients:
1 cup Hawaiian Healthy Gourmet Soy Chicken chunks
2 cups veggie chicken broth
2 stalks of celery, diced
1 2 green onions, sliced thin
1/2 cup Veganaise
1 tsp apple cider vinegar
salt and pepper to taste
whole grain bread
lettuce
tomato slices
Instructions:
- In a medium saucepan, combine the dry soy chicken chunks with the 2 cups of broth and bring to a boil, reduce heat and simmer for about 10- 15 minutes until chunks are soft. Remove from heat, cool, and then mince them into smaller pieces.
- In a large mixing bowl, combine the cooled minced soy chicken with Veganaise, celery, green onion, vinegar, salt and pepper. Mix well.
- Spread on whole grain bread, then add lettuce and tomato.
*Veganaise is available at Down To Earth in the refrigerator section.
**The great chips we used on the side were "Terra Brand" Zesty Tomato Chips also from Down To Earth.
