Chicken Salad Sandwich

I made this for some of the folks in the newsroom, and they loved it.

Ingredients:
  • 1 cup Hawaiian Healthy Gourmet Soy Chicken chunks
  • 2 cups veggie chicken broth
  • 2 stalks of celery, diced
  • 1 2 green onions, sliced thin
  • 1/2 cup Veganaise
  • 1 tsp apple cider vinegar
  • salt and pepper to taste
  • whole grain bread
  • lettuce
  • tomato slices
  • Instructions:
    1. In a medium saucepan, combine the dry soy chicken chunks with the 2 cups of broth and bring to a boil, reduce heat and simmer for about 10- 15 minutes until chunks are soft. Remove from heat, cool, and then mince them into smaller pieces.
    2. In a large mixing bowl, combine the cooled minced soy chicken with Veganaise, celery, green onion, vinegar, salt and pepper. Mix well.
    3. Spread on whole grain bread, then add lettuce and tomato.

    *Veganaise is available at Down To Earth in the refrigerator section. **The great chips we used on the side were "Terra Brand" Zesty Tomato Chips also from Down To Earth.
