Peach and Snow Pea Stir Fry

Who would think of using peaches in a stir fry? Tastes great with this homemade teriyaki sauce.

Peach Stir-FryIngredients:
Teriyaki Sauce:
  • 1/3 cup soy sauce
  • 2 TBS sherry or sake
  • 1/4 cup sugar
  • 1 1/2 TBS grated fresh ginger
  • 2 TBS minced garlic
  • 2 TBS cornstarch
  • Stir Fry:
  • 8 ounces water chestnuts
  • 2 ounces teriyaki flavored baked tofu
  • 8 ounces sliced bamboo shoots
  • 4 ounces rice noodles
  • 2 TBS vegetable oil
  • 1 peach, sliced
  • 3 ounces snow pea pods, trimmed
  • Instructions:
    1. To make Teriyaki sauce, combine all ingredients in a small bowl. Place water chestnuts, tofu and bamboo shoots in Teriyaki sauce, and set aside.
    2. Bring large pot of water to boil and cook noodles until tender, about 8 minutes. Drain rinse, and set aside.
    3. Heat oil in a large wok or skillet over medium heat. Add water chestnuts, tofu, bamboo shoots, and Teriyaki Sauce, and stir fry about 2 minutes. Add peach slices and snow peas, and stir fry 2 to 3 minutes more. Remove from heat and set aside. NOTE: When Ruby and I made this the sauce got too thick too fast. We had to add more than a half cup of water to thin the sauce. Aside from that problem, it tasted great.
    4. Portion noodles on individual plates, and spoon stir fry on top.
