Mega Veggie Burrito

Vegetarian BurritoThis is a great burrito.

Ingredients:
  • 1 TBS olive oil
  • 8 oz. Seitan, thinly sliced (This is meat substitute found at Down To Earth)
  • 3/4 cup corn kernels
  • 1/2 cup diced mushrooms
  • 1 large green bell pepper, seeded and diced
  • 4 tomatillos, diced (You can find these in produce section at Safeway and Foodland)
  • 1 cup salsa
  • 1 TBS chili powder
  • 1 tsp cumin
  • salt and pepper to taste
  • 1/2 cup cilantro (Chinese parsley) leaves
  • 1 jalapeno chili, minced (optional)
  • 4 10-inch round flour tortillas
  • Instructions:
    1. And you can use some sliced avocado for garnish.
    2. Heat large skillet over medium heat, add oil. When hot place seitan slices in oil and saute 2 to 3 minutes. Add corn, mushrooms, green pepper, tomatillos, salsa, chili powder, cumin, and salt and pepper.
    3. Reduce heat to medium low and cook 10 minutes, stirring occasionally. Stir in cilantro and remove from heat.
    4. Heat tortillas, spoon on seitan mixture. Add a thin slice of avocado and wrap your burrito.
