Colcannon

A healthy version of great Irish comfort food.

Ingredients:
  • 6 cups potatoes, peeled
  • 5 cups cabbage, sliced thin
  • 1 cup soy or rice milk
  • 1/2 cup sliced leeks
  • salt and pepper to taste
  • 1-2 TBS soy margarine or non trans fat margarine
  • parsley for garnish
  • 2-4 slices Yves Veggie Canadian Bacon, sliced thin
  • Instructions:
    1. Bring a large pot of water to boil. I cut the potatoes into quarters before boiling to reduce cooking time.
    2. Plop the potatoes in the water, let it come back to a boil then turn heat to medium. Cook potatoes until fork tender, about 15 minutes.
    3. Saute the leeks for about 2-3 minutes in a bit of water or broth. Then add and simmer the sliced cabbage in about 2 cups of water or veggie broth until the cabbage is tender, about 10 minutes. Drain and set aside.
    4. Mash potatoes in a large bowl with a hand masher or large fork. Add margarine, soy milk, sliced veggie Canadian Bacon.
    5. Add cabbage and mix well with potatoes. Salt and pepper to taste. Garnish with chopped parsley. Enjoy!
