Napa Cabbage Salad

A simple, healthy, colorful and tasty slaw.

Napa Cabbage SaladInstructions:
  • 1/2 head napa cabbage, rinsed, cored and sliced thin lengthwise
  • 1 red bell pepper, seeded and cubed
  • 2 cups shredded carrots
  • 8 oz teriyaki seasoned baked tofu (Get at Down To Earth)
  • 1/2 cup soy mayonnaise or Veganaise
  • 2 TBS soy sauce
  • 1/4 cup sugar (or to taste)
  • 2 tsp sesame oil
  • Instructions:
    1. Place cabbage slices in large serving bowl, cutting very long shreds in half for easier eating.
    2. Add red bell pepper and carrots.
    3. Drain tofu and save in a bowl to add to dressing. Cube tofu and add to bowl.
    4. Stir together mayonnaise, soy sauce, sugar and sesame oil. Add tofu juice (if any) and toss to mix. Drizzle over salad.
