Napa Cabbage Salad

A simple, healthy, colorful and tasty slaw.
Instructions:
1/2 head napa cabbage, rinsed, cored and sliced thin lengthwise
1 red bell pepper, seeded and cubed
2 cups shredded carrots
8 oz teriyaki seasoned baked tofu (Get at Down To Earth)
1/2 cup soy mayonnaise or Veganaise
2 TBS soy sauce
1/4 cup sugar (or to taste)
2 tsp sesame oil

- Place cabbage slices in large serving bowl, cutting very long shreds in half for easier eating.
- Add red bell pepper and carrots.
- Drain tofu and save in a bowl to add to dressing. Cube tofu and add to bowl.
- Stir together mayonnaise, soy sauce, sugar and sesame oil. Add tofu juice (if any) and toss to mix. Drizzle over salad.
