Thai Peanut Sauce

This is a versatile a tasty sauce.

Ingredients:
  • 1/3 cup peanut butter
  • 1/3 cup warm water or coconut milk
  • 1 tsp red chili paste (more or less to taste)
  • 1 glove garlic, minced
  • 1/2 to 1 tsp minced fresh ginger
  • 1 tsp shoyu
  • 1 tsp sugar
  • 1-2 tsp fresh lime juice
  • Instructions: Whisk or blend all ingredients with a hand mixer.

    Sauce with Swiss chard:
  • 1 bunch swiss chard, chopped
  • 1-2 tsp sesame oil
  • dash of salt

  • Heat oil in a non stick skillet. Add swiss chard and stir fry until tender, about 5 minutes. Salt to taste. Serve over jasmine rice with peanut sauce.
