Mock Tuna Salad

This uses Garbanzon Beans. Robert Kekaula actually did like this sandwich.

Dick Allgire gets Robert Kekaula a sample of the mock tuna salad sandwich.
Ingredients:
  • 1 15-ounce can garbanzo beans, rinsed and drained
  • 2 stalks celery, diced
  • 1 TBS minced red or green onion
  • 1 TBS fresh lemon juice
  • 1 TBS nutritional yeast
  • 1 tsp soy sauce
  • 1/2 tsp kelp powder (I got this at spice jars at Down To Earth)
  • salt and pepper
  • 1/3 cup Vegenaise
  • Directions
    Pulse garbanzo beans in a food processor, or mash with a fork. Add celery, onion, lemon juice nutritional yeast, soy sauce, kelp powder, and Vegenaise, and mix well in a bowl.

    Use in salads, as a dip, or in sandwiches.
