Tip: Chèvre CheesePOSTED: 5:40 pm HST March 9,
2003 Chèvre and Montrachet are tangy, creamy cheeses made from goat's milk. Domestic goat cheese is a fine substitute for the more expensive, imported brands. Once opened, wrap the cheese tightly in plastic wrap, and store it in the refrigerator for 1 to 2 weeks. (Do not confuse chèvre and Montrachet with feta cheese or caprino, Italian goat cheese, which is dried, less creamy, and more acidic.) Paulette Mitchell, a culinary instructor, television personality, spokesperson, freelance food writer, and the award-winning author of 13 cookbooks, is known internationally for her quick-to-prepare recipes with gourmet flair. She is also the author of "A Beautiful Bowl of Soup" and "The Spirited Vegetarian," which was voted "Best Book in the World on Cooking with Wine" at the 2005 Gourmand World Media Awards. Paulette says that international travel is her favorite source of culinary inspiration. |
