Strawberry Cream Cheese Tarts

You can get the banana chips and sunflower seeds at the bulk food section of Down To Earth. Ruby and I both did not care that much for this recipe- just to let you know.

Ingredients:
Crust:
  • 2 cups banana chips
  • 2 cups sunflower seeds
  • Filling:
  • 1 cups banana chips
  • 2 cups raw sunflower seeds
  • 1/2 cup lemon juice
  • 1 cups strawberries
  • 2 TBS sugar
  • 1 cup rice milk
  • Instructions:
    1. To make the crust, process banana chips and sunflower seeds in a food processor until they are pulverized.
    2. Mold this into a "crust" in small (4 inch) pie tins. You might want to add some apple juice to make the crust "hold" together better.
    3. To make the filling, process the banana chips, sunflower seeds, lemon juice, strawberries, sugar and rice milk in a food processor until the mixture is smooth and creamy.
    4. Pour into the crust molds. Place in freezer for 15 minutes to allow the mixture to "set."
    5. Transfer to refrigerator to keep cool until ready to serve.
