You can get the banana chips and sunflower seeds at the bulk food section of Down To Earth. Ruby and I both did not care that much for this recipe- just to let you know.
Ingredients:
Crust:
2 cups banana chips
2 cups sunflower seeds
Filling:
1 cups banana chips
2 cups raw sunflower seeds
1/2 cup lemon juice
1 cups strawberries
2 TBS sugar
1 cup rice milk
Instructions:
- To make the crust, process banana chips and sunflower seeds in a food processor until they are pulverized.
- Mold this into a "crust" in small (4 inch) pie tins. You might want to add some apple juice to make the crust "hold" together better.
- To make the filling, process the banana chips, sunflower seeds, lemon juice, strawberries, sugar and rice milk in a food processor until the mixture is smooth and creamy.
- Pour into the crust molds. Place in freezer for 15 minutes to allow the mixture to "set."
- Transfer to refrigerator to keep cool until ready to serve.
