Dick Allgire Says Dish Great For Any Vegetables

You can substitute any vegetables in this.

Ingredients:
  • 3 TBS vegetable oil
  • 1 package White Wave Seitan Beef Style ( in cooler case at Down To Earth)
  • 1 clove garlic, minced
  • 1 small onion, chopped
  • 2 talks celery, chopped
  • 1 carrot, chopped
  • 1 small zucchini, chopped
  • 1 small potato, diced
  • salt and pepper
  • 1/2 tsp Italian Seasoning
  • 2 TBS tomato paste
  • 1 tomato, diced
  • 1 cup red wine
  • 3 cups vegetable broth
  • 3 TBS flour
  • 3 TBS butter or extra virgin olive oil
  • Directions:
    1. Saute the seitan in 1 TBS oil, brown and set aside.
    2. In a large pot, heat 2 TBS oil, saute the onion, garlic, celery, carrot, potato, zucchini, until they start to brown and soften. Season with salt and pepper, and a pinch of Italian seasoning.
    3. Add the tomato paste and mix to cover. Add the diced tomatoes. Add the red wine and vegetable broth. Bring to a boil, reduce heat, cover and simmer for about 45 minutes.
    4. Adjust seasoning, adding salt and pepper if necessary.
    5. Heat a small pan and mix the flour and oil or butter. Stir constantly as the flour and oil mix to a paste and begin to brown. Add this to the stew to thicken the sauce.
