This peanut sauce is quick to make and gives pasta a whole new personality. Serve with steamed vegetables to give a meal a bit more nutrition.
Ingredients:
12 ounces pasta (spaghetti, linguine)
2/3 cup peanut butter
1 cup hot water
2 TBS soy sauce
2 TBS vinegar
1 TBS sugar
2-3 cloves garlic, minced
3 green onions, chopped fine
1/4 tsp red pepper flakes or cayenne (To taste)
Instructions:
- Bring water to a boil and cook pasta until just tender.
- While pasta is cooking, whisk together remaining ingredients in a small saucepan.
- Heat gently until the sauce is smooth and slightly thickened. Add more water if it is too thick.
- When pasta is tender, drain and toss with the sauce.
