Pasta With Peanut Sauce

This peanut sauce is quick to make and gives pasta a whole new personality. Serve with steamed vegetables to give a meal a bit more nutrition.

Pasta With Peanut SauceIngredients:
  • 12 ounces pasta (spaghetti, linguine)
  • 2/3 cup peanut butter
  • 1 cup hot water
  • 2 TBS soy sauce
  • 2 TBS vinegar
  • 1 TBS sugar
  • 2-3 cloves garlic, minced
  • 3 green onions, chopped fine
  • 1/4 tsp red pepper flakes or cayenne (To taste)
  • Instructions:
    1. Bring water to a boil and cook pasta until just tender.
    2. While pasta is cooking, whisk together remaining ingredients in a small saucepan.
    3. Heat gently until the sauce is smooth and slightly thickened. Add more water if it is too thick.
    4. When pasta is tender, drain and toss with the sauce.
