Ingredients: Yves Brand Veggie Hot Dogs (In the cold case at Down To Earth) Whole grain hot dog buns (also available at Down To Earth)Veggie Chili Ingredients: 2 TBS extra virgin olive oil 1/2 large onion, diced 1/2 carrot, diced 1 stalk celery diced 1/2 small red bell pepper, diced 1 jalapenio pepper, diced (optional) 1 15 ounce can crushed tomatoes 1 15 ounce can kidney beans, rinsed and drained 1 15 ounce can pinto beans, rinsed and drained 1 cup water or vegetable broth 1/3 cup TVP granules (TVP is found in the bulk food bin at Down To Earth) 1 TBS chili powder 1 tsp cumin powder salt and pepper 1 TBS honey or sugar 1 TBS vegetarian Worchestershire sauceDirections: Heat oil in a pot and saute the onion, carrot, celery, bell pepper. Add salt and pepper to season. When vegetables are softened, add crushed tomatoes, beans, and then the water or broth. Add TVP granules. Add the chili powder, cumin, honey and Worchestershire sauce. Bring to a simmer, reduce heat, cover and simmer for 30 minutes. *I made this very mild for Ruby. I add a couple of hot chili peppers to make it spicy.
Pan fry hot dogs in a frying pan coating with cooking spray. They cook better if you cut them lengthwise down the middle. Toast the bun, lay the veggie dog on the bun and top with chili. Enjoy
