This nicely spiced dish with luscious lentils and pungent curry has a smooth consistency.
Ingredients:
1 TBS olive oil
1 large yellow onion, chopped
3-4 cloves garlic, minced
1 large tomato, diced
1 TBS curry powder
1/2 tsp ground cumin
1/2 tsp black pepper
1/4 tsp turmeric
1 cup green lentils, rinsed
4 1/2 cups water
2 cups peeled, diced white potatoes
1/2 tsp salt
Instructions:
- In a medium saucepan, heat the oil over medium heat. Add the onion and garlic and cook stirring for about 5 minutes.
- Stir in the tomato, curry powder, cumin, pepper, and turmeric, and cook for 1 minute.
- Stir in the lentils and water and cook over medium heat for 15 minutes, stirring occasionally.
- Stir in the potatoes and cook until the lentils and potatoes are tender, about 30 minutes.
- Stir in the salt, remove from heat, let stand for 5 to 10 minutes.
- This goes well with Indian flat bread, pita bread, or flour tortillas.
