This nicely spiced dish with luscious lentils and pungent curry has a smooth consistency.

Indian Lentils With Curried PotatoesIngredients:
  • 1 TBS olive oil
  • 1 large yellow onion, chopped
  • 3-4 cloves garlic, minced
  • 1 large tomato, diced
  • 1 TBS curry powder
  • 1/2 tsp ground cumin
  • 1/2 tsp black pepper
  • 1/4 tsp turmeric
  • 1 cup green lentils, rinsed
  • 4 1/2 cups water
  • 2 cups peeled, diced white potatoes
  • 1/2 tsp salt
  • Instructions:
    1. In a medium saucepan, heat the oil over medium heat. Add the onion and garlic and cook stirring for about 5 minutes.
    2. Stir in the tomato, curry powder, cumin, pepper, and turmeric, and cook for 1 minute.
    3. Stir in the lentils and water and cook over medium heat for 15 minutes, stirring occasionally.
    4. Stir in the potatoes and cook until the lentils and potatoes are tender, about 30 minutes.
    5. Stir in the salt, remove from heat, let stand for 5 to 10 minutes.
    6. This goes well with Indian flat bread, pita bread, or flour tortillas.
