Lentil Soup

We got $1.45 worth of green lentils from the bulk food section at Down To Earth, about a cup and a half, to make this big pot of tasty soup.

Ingredients:
  • 2 TBS olive oil
  • 1 small onion, chopped
  • 1 stalk celery, sliced
  • 1 carrot, diced
  • 1 1/2 cup lentils
  • 6 cups vegetable broth (we used 3 cups broth mixed with 3 cups water)
  • 1 tomato, chopped
  • 1 tsp salt
  • pinch of pepper
  • 1 TBS chili powder
  • 1/2 tsp cumin
  • 1 tsp corriander powder
  • veggie sausage links
  • Directions:
  • In a large pot, saute the onion, celery, and carrot in olive oil until softened. Add salt and pepper.
  • Add lentils and veggie broth. Add chopped tomato, chili powder, cumin, and coriander, bring to a boil, reduce heat, cover and simmer about 45 minutes.
  • You can adjust the liquid, adding more broth or water if the soup is too thick. As soup is finished, pan fry sliced sausage pieces.
  • Serve soup in a bowl with sausage pieces on top, and crusty bread on the side.
