Ingredients: 1 T vegetable oil 1 t mustard seeds Pinch of asafetida ½ fresh hot green chili, sliced 1 t finely chopped ginger ½ t turmeric 1 t coriander powder ½ t cayenne pepper ½ t garam masala ½ t mango powder 1 head of cauliflower, cut into florets 2 medium potatoes, peeled and cut into strips 2-3 T water
Instructions: Heat oil in pan and add mustard seeds. Add asafetida and reduce heat. Add chili and ginger and stir fry for 10 seconds. Add turmeric and coriander powder. Add cauliflower and potatoes and season with salt. Stir to coat the vegetables with the spices. Sprinkle 2-3 T of water over the vegetables and cook covered for 10 minutes over medium low heat. Stir in cayenne pepper, garam masala and mango powder. Serves 4.
