Cauliflower And Potato With Spices

Ingredients: 1 T vegetable oil 1 t mustard seeds Pinch of asafetida ½ fresh hot green chili, sliced 1 t finely chopped ginger ½ t turmeric 1 t coriander powder ½ t cayenne pepper ½ t garam masala ½ t mango powder 1 head of cauliflower, cut into florets 2 medium potatoes, peeled and cut into strips 2-3 T water Instructions:
- Heat oil in pan and add mustard seeds. Add asafetida and reduce heat.
- Add chili and ginger and stir fry for 10 seconds.
- Add turmeric and coriander powder.
- Add cauliflower and potatoes and season with salt. Stir to coat the vegetables with the spices.
- Sprinkle 2-3 T of water over the vegetables and cook covered for 10 minutes over medium low heat.
- Stir in cayenne pepper, garam masala and mango powder.
