Brussels Sprouts With Lemon Vinaigrette

If you can get fresh brussels sprouts, they taste much better.

Ingredients:
  • 20 ounces fresh brussels sprouts, quartered
  • 2 TBS olive oil
  • 2 shallots, minced
  • zest of one lemon
  • juice of half the lemon
  • salt and pepper to taste
  • Directions:
    1. Fry the Brussels spouts in oil over very high heat, allowing them to brown slightly.
    2. Season with salt and pepper.
    3. Add shallots and cook for 30 seconds more.
    4. Add 1/2 cup of water, cover briefly to steam.
    5. Add lemon juice. Top with a drizzle of olive oil and garnish with lemon zest.

    Eat these, your mom will be proud of you.
