Creamy Soba With Herbs

Ingredients:
4 TBS oilive oil
1 cup carrots julienned
1/2 cup fresh cilantro, chopped
1 cup sliced green onions
4 cups chopped cauliflower
4 cups chopped broccoli
4 1/2 cups soy milk
1 tsp salt
1/2 tsp black pepper
1/2 cup cornstarch
1/2 cup chopped watercress
6 cups cooked soba noodles
Instructions:
- Heat oil in large saucepan. Saute the carrots, cilantro, and green onions for 2 minutes.
- Add cauliflower and broccoli and saute for about 5 minutes, stirring constantly. Add 4 cups soy milk to the vegetables.
- Add salt and pepper. Bring to a simmer.
- Use the remaining 1/2 cup soy milk to dissolve cornstarch until smooth. Add to vegetables to create a smooth sauce.
- Stir in the chopped watercress and set aside for 2 minutes. Spoon sauce over soba and serve immediately.
