Creamy Soba With Herbs

Ingredients:
  • 4 TBS oilive oil
  • 1 cup carrots julienned
  • 1/2 cup fresh cilantro, chopped
  • 1 cup sliced green onions
  • 4 cups chopped cauliflower
  • 4 cups chopped broccoli
  • 4 1/2 cups soy milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup cornstarch
  • 1/2 cup chopped watercress
  • 6 cups cooked soba noodles
  • Instructions:
    1. Heat oil in large saucepan. Saute the carrots, cilantro, and green onions for 2 minutes.
    2. Add cauliflower and broccoli and saute for about 5 minutes, stirring constantly. Add 4 cups soy milk to the vegetables.
    3. Add salt and pepper. Bring to a simmer.
    4. Use the remaining 1/2 cup soy milk to dissolve cornstarch until smooth. Add to vegetables to create a smooth sauce.
    5. Stir in the chopped watercress and set aside for 2 minutes. Spoon sauce over soba and serve immediately.
