Chunky Fresh Cranberry Relish

If you have the time this Thanksgiving, forget the canned cranberry stuff- make something fresh and delicious!

Ingredients:
  • 1/2 cup pecan pieces
  • 1 large orange
  • 12 ounces (one bag) cranberries fresh or frozen
  • 1/2 to 1 tsp ground mild red chile
  • 1/2 to 3/4 cup granulated sugar
  • Instructions:
    1. Toast pecans in a dry skillet over medium until warm and fragrant. Place in food processor.
    2. Zest orange (this means peel the colored part of the peel) and add to food processor. Cut off the white pithy part and remove seeds. Cut orange into large chunks and place in processor.
    3. Add cranberries and ground chile and 1/2 cup sugar to processor and chop coarsely. Taste and add more sugar ass needed. This should be tart. Chill 30 minutes and serve
