Green Tomatillo Salsa

Ingredients:
  • 4 tomatillos (They always have these at Foodland produce department)
  • 1/2 onion
  • 3/4 cup water
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1-2 TBS vegetable oil
  • 1 large clove garlic
  • 2-3 whole chili peppers (careful- to taste)
  • Directions:
    1. Peel the tomatillos and slice them into quarters. Cut the onion into quarters, and place the tomatillo and onion in a small saucepan with the water.
    2. Bring to a simmer and cook about 5 minutes until they get soft. Add salt and sugar.
    3. In a small frying pan heat oil and saute the garlic and chilis until they turn brown, but don't burn.
    4. Add all ingredients to a food processor. Add fresh lime juice and another pinch of salt. Pulse to blend into salsa.
