Tomato Soup
Tourin a la Tomate

Ingredients: Olive oil, 4 tbsp 2 Large onions, thinly sliced 3 garlic cloves, shopped Ripe Plum tomatoes, 2 lbs, peeled, seeded & chopped 1 bay leaf Water, 5 cups Salt and pepper Vermicelli, 1 inch length, ¼ cup Fresh chives, 2 tbsp, chopped Parmesan, ½ cup Instructions:
- Heat olive oil in large pot and cook onion and garlic over medium heat for 5 minutes.
- Add tomatoes and bay leaf and cook for 5 minutes.
- Pour in water and season with salt and pepper.
- Bring to a boil, cover and simmer for 30 minutes or until vegetables are tender.
- Force through a sieve or puree in a blender and return to pot.
- Increase heat. When soup is boiling, add vermicelli and cook until tender but still firm. Sprinkle chives and cheese.
