Ingredients:
  • Olive oil, 4 tbsp
  • 2 Large onions, thinly sliced
  • 3 garlic cloves, shopped
  • Ripe Plum tomatoes, 2 lbs, peeled, seeded & chopped
  • 1 bay leaf
  • Water, 5 cups
  • Salt and pepper
  • Vermicelli, 1 inch length, ¼ cup
  • Fresh chives, 2 tbsp, chopped
  • Parmesan, ½ cup
  • Instructions:
    1. Heat olive oil in large pot and cook onion and garlic over medium heat for 5 minutes.
    2. Add tomatoes and bay leaf and cook for 5 minutes.
    3. Pour in water and season with salt and pepper.
    4. Bring to a boil, cover and simmer for 30 minutes or until vegetables are tender.
    5. Force through a sieve or puree in a blender and return to pot.
    6. Increase heat. When soup is boiling, add vermicelli and cook until tender but still firm. Sprinkle chives and cheese.
