Mushroom Puttanesca

Serves 2

Directions:
  • 1/2 package Barilla spaghetti or thin spaghetti
  • 1 cup tomato sauce
  • 2-3 TBS extra virgin olive oil
  • 6-8 crimini mushrooms, sliced
  • chili flakes (to taste)
  • 2 cloves garlic, sliced thin
  • 1/4 cup dry white wine
  • 1/2 TBS capers
  • 6 olives, sliced
  • Directions:
    1. I made the sauce while the pasta is cooking. Cook pasta according to package directions, but remove from heat and drain 1 minute before recommended cooking time.
    2. Heat oil in a skillet, add mushrooms, chili flakes, garlic, and cook several minutes. Add the white wine, and the capers and olives.
    3. Continue to simmer.
    4. When the pasta is 1 minute from done, add to sauce and toss to coat the spaghetti.
    5. Garnish with a drizzle of extra virgin olive oil, chili flakes, and fresh parsley.
