A tasty olive spread that goes great on toasted French baguette.

Ingredients:
  • 1/2 pound good black olives, pitted and diced
  • 3 TBS capers, drained
  • 1 clove garlic, minced
  • 1/2 cup good olive oil
  • 1 TBS fresh lemon juice
  • 2 tsp Dijon mustard
  • 1 tsp fresh thyme leaves
  • 1 TBS fresh chopped parsley
  • 1 baguette, sliced and toasted
  • Directions:
    Combine olives, capers, and garlic in a food processor and pulse 2-3 times. Add olive oil, lemon juice, mustard, thyme, and parsley, and process until chunky. Serve on toast.
