Penne With Veggies

I used the fancy colored purple and yellow cauliflower for this segment, but you can use plain old white cauliflower. It tastes the same.

Basic Tomato Sauce Recipe

Boil about a cup and half of Penne pasta according to package directions. Usually about 11 minutes.

Veggies:
  • About 2 cups total cauliflower florets, broccoli, and chopped zucchini
  • 1 tsp (more or less to taste) dry chili flakes
  • a pinch of saffron
  • 2 TBS white wine
  • salt and pepper to taste
  • Directions:
    1. Steam or blanch the cauliflower and broccoli so that it is softened and mostly cooked. In a large skillet heat 2 TBS extra virgin olive oil.
    2. Add the zucchini and cook over medium high heat for several minutes. Add the already cooked cauliflower and broccoli. Add the chili flakes.
    3. Add a pinch of salt and pepper. Place a pinch of saffron in the 2 TBS of wine. Add that to the cooking veggies and mix well.
    4. Add about a cup of the basic tomato sauce. Add the cooked Penne pasta. Mix well and serve. You can garnish with fresh basil.
