Choy Sum Miso Ramen

This makes one big serving. I use Sun Brand fresh saimin noodles.

Broth Ingredients:
  • 1- 2 TBS soy sauce
  • 2 TBS wine or Sherry
  • 1 tsp chili paste (optional)
  • 2 TBS nutritional yeast flakes (From bulk food section Down To Earth)
  • 1 tsp sesame oil
  • 1 TBS light miso
  • 2 TBS dark miso
  • 2 cups vegetable broth
  • Directions:
    1. Combine ingredients, be sure miso paste is mixed well, and heat to just boiling.
    2. In a wok or large non stick fry pan, heat 2 TBS peanut oil.
    3. Chop one small bunch of choy sum, add to oil and cook until leaves wilt and stems are tender.
    4. Cook and drain the noodles and place them in a large bowl. Add the cooked choy sum. Pour on the hot miso broth. Garnish with chopped green onions.
