Mimi's Spicy Pickled Vegetables

Ingredients:>
  • Pickling Juice:
  • 1 cup low sodium soy sauce
  • 1 cup vinegar
  • 4 TBS sugar
  • 3 TBS Mirin (sweet sake)
  • Combine ingredients, making sure the sugar dissolves.

    Vegetables:
  • stalks of celery chopped small onion, sliced or chopped about a cup of daikon, chopped
  • 1 Japanese cucumber, sliced
  • 1/2 red bell pepper sliced into bite sized pieces
  • OPTIONAL 1 jalapeno pepper, sliced
  • Instructions:
  • Mix vegetables and pack into tupperware container. Cover with the pickling juice, seal up tight and let it sit in the fridge about 2 -3 days. Will last at least a week in the fridge.
