Chocolate Crispies

These are really easy to make. You can get fresh nut butter at the bulk food section at Down To Earth. They have machines that let you make your own, which is great. If you only need a half cup of fresh peanut or cashew butter, you just hit the "on" switch and it makes fresh peanut butter, cashew butter.Ingredients: 1/2 cup almond butter (I used 1/4 cup peanut butter and 1/4 cup cashew butter) 3/4 cup brown rice syrup You can find this at Down To Earth 1/2 cup chocolate chips (I used vegan carob chips) 3 cups crispy brown rice cereal- like Rice Crispies but made of brown rice. In the cereal section at Down To Earth Directions:
- Coat a 9 inch by 9 inch square baking pan with cooking spray.
- Place nut butter, brown rice syrup and chocolate bits in a large saucepan over medium heat. Cook 4 minutes, stirring constantly, until ingredients melt together.
- Remove from heat, stir in the crispy rice cereal. Press mixture into the pan and let cool at least 15 minutes.
- Dip a sharp knife in water and slice into squares.
