Organic Saffron Ribbons and Fresh Vegetables

This recipe features Eden Organic Saffron Ribbons from Down To Earth. This recipe serves 2.Ingredients: 4 ounces (about half a box) Eden Organic Saffron Ribbons 2 TBS extra virgin olive oil 1/2 tsp (more to taste) hot chili pepper flakes 3/4 cup cauliflower florets, steamed 3/4 cup broccoli florets, sliced thin 1/2 small red bell pepper cut into thin slices 1/2 small zuccini, sliced thin 4-6 kalamata olives, pitted 1 cup spaghetti sauce (your favorite brand) Special Sauce Ingredients: 1/4 cup Vegenaise (vegetarian mayonaise) Buy this a fridge section Down To Earth 2 TBS fresh basil, chopped very fine 1 TBS fresh lemon juice Instructions:
- Combine all sauce ingredients in a small bowl and mix well
- Cook saffron ribbons in boiling salted water, per package directions, about 6 minutes.
- Heat olive oil in a large pan, and saute the steamed cauliflower, broccoli, red pepper, and zucchini, adding the chili flakes and olives. Cook until crispy tender, about 5 minutes.
- Add the spaghetti sauce and combine well.
- When Saffron ribbons are cooked, drain and stir into the sauce and vegetable mixture. Toss well and top with a few dollops of the special basil Vegenaise sauce.
