Organic Saffron Ribbons and Fresh Vegetables

Ingredients:
  • 4 ounces (about half a box) Eden Organic Saffron Ribbons
  • 2 TBS extra virgin olive oil
  • 1/2 tsp (more to taste) hot chili pepper flakes
  • 3/4 cup cauliflower florets, steamed
  • 3/4 cup broccoli florets, sliced thin
  • 1/2 small red bell pepper cut into thin slices
  • 1/2 small zuccini, sliced thin
  • 4-6 kalamata olives, pitted
  • 1 cup spaghetti sauce (your favorite brand)
  • Special Sauce Ingredients:
  • 1/4 cup Vegenaise (vegetarian mayonaise) Buy this a fridge section Down To Earth
  • 2 TBS fresh basil, chopped very fine
  • 1 TBS fresh lemon juice
  • Instructions:
    1. Combine all sauce ingredients in a small bowl and mix well
    2. Cook saffron ribbons in boiling salted water, per package directions, about 6 minutes.
    3. Heat olive oil in a large pan, and saute the steamed cauliflower, broccoli, red pepper, and zucchini, adding the chili flakes and olives. Cook until crispy tender, about 5 minutes.
    4. Add the spaghetti sauce and combine well.
    5. When Saffron ribbons are cooked, drain and stir into the sauce and vegetable mixture. Toss well and top with a few dollops of the special basil Vegenaise sauce.
