Pesto Pizza

I bought the pesto ready made at Down To Earth. (Recipe for homemade follows)Pizza Crust: 1 tsp rapid rise yeast 1/2 cup warm water 1 TBS honey 1 TBS olive oil 1 1/2 cup flour 1 tsp salt Directions: 1/2 cup walnuts (or Macadamia) 1 cup packed fresh basil 1 tsp salt 1/2 cup extra virgin olive oil 1 small garlic clove, minced Directions:
- Mix water and yeast in a large bowl. Add the honey and oil.
- Add the flour and salt and knead the dough for about 5 minutes.
- Roll into a ball, place in the bowl and cover lightly with a towel or Saran wrap.
- Let it rise for an hour, then roll out into pizza crust.
- Combine ingredients in a food processor and blend to paste. You may need to add extra olive oil or water to thin it out a bit.
- Preheat oven to the hottest it will go- 550 degrees or 575. Roll out your pizza dough and put it on a pizza stone, pizza pan, or cookie sheet.
- Spread pesto over pizza dough. Add roasted eggplant, kalamata olives, cherry tomatoes, and walnuts.
- Cook the pizza for 12-15 minutes.
