Pesto Pizza

I bought the pesto ready made at Down To Earth. (Recipe for homemade follows)

Pizza Crust:
  • 1 tsp rapid rise yeast
  • 1/2 cup warm water
  • 1 TBS honey
  • 1 TBS olive oil
  • 1 1/2 cup flour
  • 1 tsp salt
  • Directions:
    1. Mix water and yeast in a large bowl. Add the honey and oil.
    2. Add the flour and salt and knead the dough for about 5 minutes.
    3. Roll into a ball, place in the bowl and cover lightly with a towel or Saran wrap.
    4. Let it rise for an hour, then roll out into pizza crust.

    Pesto Sauce:
  • 1/2 cup walnuts (or Macadamia)
  • 1 cup packed fresh basil
  • 1 tsp salt
  • 1/2 cup extra virgin olive oil
  • 1 small garlic clove, minced
  • Directions:
    1. Combine ingredients in a food processor and blend to paste. You may need to add extra olive oil or water to thin it out a bit.
    2. Preheat oven to the hottest it will go- 550 degrees or 575. Roll out your pizza dough and put it on a pizza stone, pizza pan, or cookie sheet.
    3. Spread pesto over pizza dough. Add roasted eggplant, kalamata olives, cherry tomatoes, and walnuts.
    4. Cook the pizza for 12-15 minutes.
