The Bliss Of Krishna Rice Pudding

From "Vegan World Fusion Cuisine"Ingredients: 1/2 cup white basmati rice 1 cup coconut milk 2 1/2 cups vanilla flavor soy milk 1/3 cup sucanat (or sugar) 3 TBS maple syrup 1/4 cup macadamia nuts, chopped and toasted 1/3 cup raisins 1/2 tsp cinnamon powder 1/4 tsp cardamom powder 3/4 tsp vanilla extract mint leaves for garnish Instructions:
- Place rice, coconut milk, and 2 cups (only) of the soy milk in a pot and cook over medium heat until rice is cooked, about 30 minutes, stirring occasionally.
- Remove from heat, add remaining ingredients, including the rest of the soy milk. Mix well.
- Garnish with mint leaf and toasted nuts. Serve warm or cold.
